For Cold Winter Day

Still Searching for Richer and Heavier Brownie Recipe

Just because I want heavier and chewer one, I will try without adding baking soda nor baking powder. Instead of it, I will whisk eggs.


{ Ingredients } for 6 cups

  • 1/4 cup unsalted butter
  • 1/4 cup coconuts oil
  • 2 egg yolk
  • 2/3 cup sugar
  • 1/3 cup pure cocoa powder
  • 1/2 cup all-purpose flour
  • 1 cup of cream cheese
  • 1/4 cup of sugar
  • raisin soaked in rum

{ Directions }

    1. Melt butter and coconut oil.
    2. Preheat oven to 300 degrees F or 160 degree C.

    1. Mix cream cheese and 1/4 cup of sugar.
      Divide it into 6 pieces.
    2. In a big bowl, whisk all eggs and sugar.
    3. Add melted butter and coconut oil. Blend them well.

    1. Sieve all-purpose flour and pure cocoa powder from the point as high as you can. Then blend them lightly and nicely.

    1. Pour the batter into cups
    2. Add a piece of cream cheese and raisin on each cup.
    3. Bake in preheated oven for 25 minutes.

  1. Take them out and serve or taste

Yes, it is great! I know I like the flavor, but texture is better, especially the top part. The slightly burned surface was unexpected success. Baking with a square pan is better than the muffin cup for the even chewy one? I should try that next time although baking in cup looks cute and upgraded.
