For Cold Winter Day and Night

Seeking the Ideal Brownie Recipe – Heavy and Chewy one – that I could not make it last winter

{ Ingredients }  for 6 cups

  •  1/4 cup unsalted butter
  • 1/4 cup coconuts oil
  • 1 whole egg
  • 2 egg yolk
  • 2/3 cup sugar
  • 1/3 cup pure cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tea spoon baking soda
  • 1 cup of cream cheese
  • 4 table spoon sugar for cream cheese filling
  • raisin soaked in rum

 { Directions }

  1. Melt butter and coconut oil.
  2. Preheat oven to 300 degrees F or 160 degree C.
  3. Mix cream cheese and 4 table spoon sugar.
  4. In a big bowl, stir butter, coconut oil, sugar, all the eggs.
  5. Beat in pure cocoa powder, all-purpose flour, baking soda.
  6. Pour the batter into cups.
  7. Add piece of cream cheese and raisin
  8. Bake in preheated oven for 25 minutes.
  9. Take them out and serve or taste first

Tastes great! really..  The combination of cocoa, cream cheese and rum raisin is one of the best flavor in any baked sweets.  This is great enough, I know… But I want heavier and chewier one rather than this airy spongy ones.

I found the tips on somebody’s blog that more yolk makes them heavier.  So I used 1 whole egg and 2 yolks this time, but still want more chewiness.

I will try it again without baking soda next time.

What I am trying to is totally different from many bakers, I know.  Many people trying to bake as light and airy as it can be.
