Castella sponge cake is one of the most popular sweets for gifts in Japan. It is from Portugal to Nagasaki, Japan in 16th century. So most of the Castella sponge cake manufactures have “Nagasaki”in their names. It is very airy but richy. This kind of Castella sponge has crust of granulated sugar at the bottom thin brown layer.
