Konnyaku is jelly made from devil’s-tongue starch. It usually is gray or white. This Nibo Konnyaku is such a unique color that I could not recognize it as a Konnyaku. This is one of the regional food of Shiga Japan. Why red? It is said that it is made for Nobunaga Oda’ s preference – flashy. He is the shogun in the late 16th century who attempted to unify Japan during the late Sengoku period. (^▽^;)
